How To Make Chocolate Zucchini Bread

Are you trying to find a way to get your kids, or siblings, or even your friends to eat healthier? Well look no further! I have a delicious recipe for a chocolate cake so irresistible they won’t be able to keep their hands off it. It just so happens that there is 2 cups of zucchini in the cake! Here’s the recipe:
2 1/4 cups all purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 3/4 cup sugar
1/2 cup unsalted butter at room temperature
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
2 cups grated zucchini
1 cup chocolate chips
3/4 cup chopped walnuts (optional)

Now I bet you’re thinking…great! I have the recipe, but what am I supposed to do with it? Well have no fear…I have made this cake many times and have perfected the preparation process.

Preheat your oven to 325 degrees. Sift your flour, cocoa powder, baking soda, and salt in a medium bowl. Beat sugar, butter, and oil in a large bowl until well blended. Then, add your eggs (one ate time). Beat well after each egg is added. Then, add your vanilla. Mix in your dry ingredients alternating with the buttermilk in three sets. Mix in your zucchini and pour the batter in the pan. Make sure you have greased your pan!! Sprinkle your chocolate chips and walnuts over the batter. Bake for approximately 50 minutes.

Even though the cake tastes very good plain, I have found that frosting adds a lot to the flavor. You can choose what kind of frosting to use. I am a chocolate lover so I like to frost my chocolate cake with chocolate frosting. If that sounds like too much to you, go ahead and frost it with whatever kind of frosting you choose.
